Crazy Good Cranberry Bread (Show 1286)

During ZucchiniLand's tornado watch, when Jack, Steve, Sam and Susan were creating a storm shelter in the basement, Susan's mom and Mrs. Zucchini did some scrapbooking and made cranberry bread from a recipe that Susan's mom uses. Here is her family's delicious cranberry bread recipe. It's WAY good--and makes the house smell great! (But it sure doesn't last long--at least around the clubhouse--so you may want to make two loaves instead of just one!)
 
Ingredients:
 
     * 2 cups whole wheat flour (or 1 cup whole wheat flour and 1 cup non-bleached white flour)
 
     * 1/2 tsp. baking soda
 
     * a pinch of salt
 
     * 1/2 cup orange juice
 
      * 1 Tbs. grated orange rind
 
     * 2 Tbs. canola oil
 
     * 2 Tbs. hot water
 
     * 1/2 cup honey
 
     * 1 beaten egg
 
     * 1 cup cranberries
 
     * 1/2 cup chocolate chips optional)
 
Preheat your oven to 325 degrees (F). Then sift together the flour, baking powder, and salt. In a small, separate bowl, combine the orange juice, orange rind, canola oil, and hot water. Pour into dry ingredients. Then add the honey and egg. Mix the batter well. Finally, mix in the cranberries and chocolate chips. (Once we used raspberry-flavored chocolate chips, and the bread came out especially good!)
 
Grease a loaf pan (we use non-stick spray), and pour the batter into the pan. Bake for 1 hour, until a toothpick inserted in the center comes out clean. Let the bread cool for a few minutes in the pan, before removing it from the pan and placing it on a wire rack to cool the rest of the way. The challenge is to let it cool before eating it...but it slices better (and is less likely to crumble) if you wait! Try it, and you'll see why we call it 'Crazy Good Cranberry Bread!' Mmmmmmm!
